Biryani !! so tempting as heard. All of us know about the deliciousness of this magnificent dish. It makes our parties, dinners, get-together, weddings and all other traditional and non-traditional occasions so special. We try to serve this fantastic dish to our special guests and expect to be served with when invited.
There are many types of Biryani, differ from region to region for example “Sindhi Biryani”, “Haider-abadi Biryani”, “Bombay Biryani”, “Kacche Gosht ki Biryani” and so on. All of us love to have Biryani but some of us wonder how to make biryani. Though its a little bit tricky but after a little practice and care you will be able to make it yourself. Underneath, there is a simple method to answer your question “How to make Biryani” ?
- Meat (Chicken/ Mutton/ Beef) 1/2 kg (500g)
- Rice 1/2 kg (500g)
- Onion (medium size) 4
- Tomato (medium size) 4
- Yogurt 1-1/2 Cup
- Ginger (paste) 2 tbsp
- Garlic (paste) 2 tbsp
- Oil 1-1/2 Cup
- Dried Plum 4-5
- Salt As per taste
- Red Chilli powder As per taste
- Black Pepper 5-6
- Turmeric 1/2 tsp
- Black Cumin Seed 1/2 tsp
- Cinnamon 3-4
- Clove 3-4
- Large Cardamom 2
- Small Cardamom 5-6
- Bay Leaf 2
- Mace (Jaifal) 1 Pinch
- Nutmeg (Jawetri) 1 Pinch
- Yellow food color or Saffron 1 Pinch
- Kewra Water (optional) 1tbsp
Rinse rice and soak them into water for 20 minutes at-least. Put on the pan to heat oil and fry thinly sliced onion till brown. Add meat and frequently stir for 5 minutes on medium heat. Now add 4-5 cups of water and let it be cooked on low flame till meat is tender. No water is needed in case you are using chicken.
Add chopped tomatoes, ginger garlic paste, beaten yogurt and rest of the ingredients 2 except food color (or saffron) and kewra water. Mix all well and cook for 10-15 minutes on low flame.
Now in a separate pan take approximately 12 glasses of water to boil, add 3 tbsp salt and boil rice till 3/4 is done.
Make a layer of half the boiled rice, put on the whole meat and its gravy to make layer and cover it with the layer of remaining half rice. Sprinkle food color or saffron and add kewra water. Put the lid on the pan to cover it tight and increase the flame for 5 minutes. Lower down the flame and simmer it for 10-15 minutes.
Here you r with your delicious dish ready to have. Serve it with raita and salad and get praised.
